Guilt free cookies made of vegetables! Crush the sweet tooth craving with sweet potato cookies with a kick of cinnamon.
2 mashed and cooked Sweet Potatoes
1 cup Quick Oats
1/3 cup Almond Butter
1/4 cup Almond Milk
1 tbsp of Cinnamon
1 tsp melted Butter or Coconut Oil
Mix sweet potatoes, oats, almond butter, almond milk, and cinnamon together in a medium size bowl.
On a cooking sheet with parchment paper, brush melted butter on top.
Scoop tablespoon size cookie dough onto the sheet and flatten. Leave 1 inch of space in between each cookie (makes about 12 cookies).
Bake at 375 degrees F for about 20-25 minutes until golden.
