MISO BUCKWHEAT NOODLES WITH GREENS


Warm up with buckwheat noodles in a miso soup with bok choy and seaweed. Getting whole grains with superfood greens!


Ingredients

  • 1 cup Buckwheat Noodles

  • 1/2 cup Dried Seaweed

  • 1/2 cup Bok Choy

  • 1 tbp Miso Soup Paste

  • 1 clove Chopped Garlic


Instructions

  1. In a small pot, bring water to a boil and mix in miso paste.

  2. Put the dried seaweed, garlic, and bok choy into the soup mixture.

  3. Stir until bok choy is soft and cooked (2-3 minutes). Set aside.

  4. In a separate pot, boil the buckwheat noodles for about 2-3 minutes until cooked.

  5. Drain the noodles in a strainer and run under cold water.

  6. Bring the noodles and bok choy soup mixture together in a large bowl.

  7. Enjoy!
