Warm up with buckwheat noodles in a miso soup with bok choy and seaweed. Getting whole grains with superfood greens!
1 cup Buckwheat Noodles
1/2 cup Dried Seaweed
1/2 cup Bok Choy
1 tbp Miso Soup Paste
1 clove Chopped Garlic
In a small pot, bring water to a boil and mix in miso paste.
Put the dried seaweed, garlic, and bok choy into the soup mixture.
Stir until bok choy is soft and cooked (2-3 minutes). Set aside.
In a separate pot, boil the buckwheat noodles for about 2-3 minutes until cooked.
Drain the noodles in a strainer and run under cold water.
Bring the noodles and bok choy soup mixture together in a large bowl.
