SMOKED SALMON SUSHI WITH AVOCADO
4 slices Smoked Salmon
1 cup cooked Brown Rice
2 sheets Dried Nori (seaweed)
1/2 sliced Cucumber
1 sliced Avocado
Soy Sauce (optional for dipping)
Cut cucumber and avocado into long sticks approximately 3 inches long. This will help for easy wrapping.
Scoop 1/2 cup of cooked brown rice onto seaweed sheet. Spread evenly on the whole sheet.
Put cucumber, avocado, and 2 slices smoked salmon along the bottom of the seaweed sheet (in a straight line). Use the bottom of the sheet as a guide when rolling.
When rolling is complete, you should have a sushi burrito.
Eat as is or cut into 1 inch wide bite sizes.
Repeat steps #1 to #3 again (makes 2 rolls).
Optional to use soy sauce for dipping.
