QUINOA WITH PEPPERS AND SPINACH
1/2 cup Quinoa
1 cup Water
1 cup chopped Red Peppers
1 cup Spinach
3 cloves Garlic
1 tsp Avocado Oil
1 tsp Sesame Oil
1 tsp Oregano
Pinch of Himalayan Salt
Pinch of Pepper
In a medium pot, bring water to a boil. Put quinoa in and stir frequently. Cook for 20 minutes.
Fluff cooked quinoa with fork and set aside.
In a separate large pan, heat avocado oil and garlic for about 30 seconds until hot.
Put peppers and spinach into pan and stir occasionally until vegetables are soft.
Add cooked quinoa into the large pan of vegetables and top with sesame oil, salt, pepper, and oregano.
Mix together and enjoy!
